Squab Pie

| Squabs | 2 | Split in half |
| Potatoes | 4 | Diced |
| Onion | 1 | Chopped |
| Parsley | 1 Tbsp | Chopped |
| Pepper | ¼ tsp | |
| Salt | 1 + 1¼ tsp | |
| Flour | 2 cups | |
| Baking Powder | 4 tsp | |
| Butter | ⅔ cup + extra | |
| Water | ½ cup cold + 3 cups boiling |
Method
- Preheat oven to 350 °F
- Dice potates
- Chop onion and parsley
- Butter casserole dish
- Place layer of potates in casserole
- Place layer of onions and parsley on top of potatoes
- Split squab in half, rub with 1 tsp salt and ¼ tsp pepper
- Place squab in casserole on top of onions
- Make a pie crust dough of Flour, Baking Powder, ⅔ cup butter, 1¼ tsp salt, and ½ cup cold water
- Roll out dough to ¼ inch thick
- Cut dough into 2 inch squares
- Arrange dough squares on top of squab
- Boil 3 cups water and add to casserole
- Cover and bake for 1 hour or until all is tender
- Rmove cover and brown under broiler
